1. Mozzarella & Pesto Pita Pizzas

You'll start off this meal by prepping the veggies which consist of lettuce, red bell pepper, and Roma tomato. You'll then throw together a salad that uses the prepped lettuce and pepper and combines them with Parmesan cheese and sunflower seeds in a medium bowl, that's topped off with lemon-basil caper sauce. Up next is the assembly of the pita pizza. Spread basil pesto over the pitas, sprinkle them with mozzarella cheese, and layer tomato over top. Then, bake the pizzas long enough for the cheese to melt and drizzle them with balsamic glaze until your heart's content. Each serving contains 810 calories, 67g carbs, 30g protein, and 48g fat.

2. Prosciutto & Fresh Mozzarella Snack Board

Charcuterie board for lunch? Count me in! While this meal is a bit light on calories, it's the perfect option for grazers or those who are trying to save up a bit of room for dinner. To begin your board, first soften the dried cherries in water, prep rainbow carrots and cucumbers, and cut fresh mozzarella cheese into slices. Then, combine crème fraîche and sour cream with lemon and dill to make a dip and season with salt and pepper. Follow that with separating the prosciutto and arranging it on board next to the mozzarella which will need to be topped with a bit of olive oil and seasonings. Finish it off by plating your dish, snap a quick pic, and then dig in. Each serving contains 490 calories made of 40g carbs, 19g protein, and 32g fat.

3. Thai-Spiced Chicken Salad

Can't go wrong with salad for lunch, and this Thai-inspired dish is sure to please. You'll begin this recipe by slicing fully cooked chicken breasts widthwise into strips and heating them up until they're warmed through. Then, prep the veggies (lettuce, red bell pepper, cabbage, carrots, scallion, cilantro) and combine them in a bowl with the prepped chicken. Drizzle the salad mix with ginger-lime vinaigrette, toss lightly, and season with salt and pepper to taste. All that's left is topping off your salad with sugar-free Sriracha sauce and garnishing it with roasted cashews, black and white sesame seeds, and leftover cilantro. Each serving contains 400 calories which includes 21g carbs, 32g protein, and 22g fat.
