If you work from home like I do, then I'm sure your 30-minute lunch break feels like it's over in a matter of seconds. While I used to dedicate my whole break to whipping up rad recipes, I quickly realized that wasn't feasible in the long run. I had to find the perfect balance between fast and fresh, so I turned to Green Chef for help! Here are some of my favorite recipes from Green Chef for lunch that take 10 minutes or less to make.

1. Thai-Spiced Chicken Salad

This type of salad has been my go-to for lunch for a decade plus now. And, while I prefer cooking everything from scratch, having the chicken come ready to heat keeps this lunch quick. All I have to do is heat up the chopped chicken (using my cast iron pan, of course), toss my salad together, and voilร ! This salad mix comes with romaine lettuce, red bell pepper, scallions, cilantro, cabbage, carrots, cashews, and sesame. And, it's flavored with a mix of Thai-style seasoning, sugar-free Sriracha, and ginger-lime vinaigrette. Green Chef created the perfect combo, of sweet, savory, and a hint of spicy with this lunch.

2. Prosciutto & Fresh Mozzarella Wraps

Sometimes you need a hardier meal than salad for lunch. Cue prosciutto and mozzarella wraps! You'll start off by prepping the lettuce, tomato, and cheese so that they'll fit perfectly within the wraps. Then, you'll toss the lettuce and tomato with pine nuts and balsamic glaze. Now, you're ready to assemble the wraps which requires spreading basil pesto on the bottom half of each flour tortilla, placing prosciutto, cheese, and about half the salad on top (the other half will be plated on the side), and then folding the sides up. I find this meal super helpful on the days when I need major replenishment from a demanding morning.

3. Mexican-Spiced Black Bean Salad

Let's face it - most salads get pretty boring after a few bites and lack flavor. This salad is quite the exception! I just prep the greens, heat up the beans, and then toss the salad together, and plop the guac on top. This salad combines romaine lettuce, grape tomatoes, scallions, and cabbage with a flavor fest of black beans, pepitas, sour cream, cheddar cheese, guac, Cholula sauce, spices, and cilantro cider vinaigrette. It may sound too heavy for salad, but the ingredient portions are truly perfect and everything works together in harmony.

4. Deli-Style Chickpea Salad Sandwiches

As I'm sure you can tell by my previous picks, I'm definitely not a vegan. But, this sandwich totally changed my tune about plant-based recipes.ย  You'll toss together scallion, celery, capers, cashew-based Parmesan, vegan lemon aรฏoli, umami stock concentrate, and dill to create the dressing. Then, you'll mash the chickpeas to create a paste-like filler and combine them with the dressing. Once you're done, just toast the sourdough bread and top it with your chickpea mash and you're good to go!
