Terra's Kitchen is a meal kit delivery subscription service with recipes created around the Mediterranean diet and lifestyle. According to Terra's Kitchen, the heart-healthy, inflammation-reducing Mediterranean diet includes "colorful fruits and vegetables, nuts, heart-healthy fats (like olive oil and avocados) and minimizes red meat, sugar, and saturated fat."

Unlike other meal kits, which offer smaller weekly menus, Terra's Kitchen offers a menu of 50+ dishes (that changes a little less frequently) with choices for vegetarian, paleo, gluten-free, and even low-calorie diets (they even have an entire nutritionist-directed "Real Diet" program for those of you looking for healthy weight loss guidance). Set your preferences, and Terra's Kitchen will match you with weekly meals to fit. Or, you can dive into the menu and pick what recipes work for you making the experience totally customizable! You may also add à la carte items like smoothies, salads, and fruit.

One big difference between Terra's Kitchen and other meal kit delivery subscriptions is that it ships your ingredients in a heavy-duty, reusable package.

Swing open the doors of the cooler, and you'll find all of your pre-portioned ingredients neatly packaged and arranged on its teal shelves. Ingredients are antibiotic and hormone-free and mostly GMO-free and organic.

Once you've transferred all of the chilled, fresh ingredients to your fridge, you'll follow the instructions on the box and leave it out front of your house to be picked up (and used again)! It's definitely an out-of-the-ordinary approach, but I have to say, I love it! Recycling meal subscription box after box (and its insulation, and ice packs, and other materials) still feels like I'm creating a lot of waste, so I love knowing that this one cooler will be able to be used over and over again.

The ingredients for your recipes are packaged in small, super-light plastic containers—I took the containers out of my vessel and managed to fit all of them in the crisper drawer of my fridge. Terra's Kitchen does most of the chopping, slicing, and dicing for you, which not only helps the recipes go faster but makes for smaller packages of ingredients that are easier to store.

I should start out the step-by-step of this dish with noting that my husband did a majority of the preparation. That goes for all 3 meals, actually. Being that I had a baby the week that our Terra's Kitchen shipment arrived, he was able to step in and spend some time in the kitchen. While I was able to occasionally hover over his shoulder, he did all of the work.

Anyway, these ingredients definitely leaned Thai, and I was very into that. It's a total favorite around here.

We started off with draining, cubing, and lightly frying the tofu.

Next up, the noodles are softened by soaking. Neither of us had prepared this type of noodle before, but it's super easy. Just let 'em sit in hot water for a couple minutes.

The tangy dressing is made by whisking Sriracha, brown sugar, canola oil, lime juice, and soy sauce.

The basil and cilantro are coarsely chopped along with the jalapeño.

Terra's Kitchen makes salads like this one super easy to prepare since veggies come pre-chopped. Cabbage, carrot, scallions - you really just throw everything into a bowl and toss with your dressing!

This salad was delicious and yielded a pretty generous serving size. Crunch, refreshing, and packed with protein from the tofu! My husband also noted that it was the easiest dish to prepare of all 3 meals this month, so bonus points for simplicity.

Mushroom Stroganoff

This meal began with cooking the veggies and noodles, which we did simultaneously. Mushrooms and onions are cooked down with olive oil and then garlic is added.

Those classic stroganoff egg noodles only take several minutes to soften in boiling water.

We then prepared the vegetable stock for the gravy-like sauce. Simply whisk the veggie stock concentrate into hot water. Then flour to thicken, soy sauce, and paprika is added.

This mixture is poured into the cooked down mushrooms and onions. Meanwhile...

...coarsely chopped parsley is added to the finished noodles.

The sauce is finished off with sour cream to create a thicker, creamier consistency.

This homey bowl of noodles and mushroom gravy felt really comforting and almost nostalgic to eat on a cold day. Perfecting the sauce took some finessing, but my husband dubbed it to be 'pretty easy' to prepare overall. I could see us attempting to recreate a version of this dish later this winter, for sure.

The ingredients for this last dish were the farthest back in our very cold fridge, so some of the veggies appear to be a little frozen. Per usual, it's awesome that the onions and kale are pre-sliced.

Next, curry, ginger, garlic, and crushed tomatoes are added as well as veggie stock (you must prepare it by adding stock concentrate to hot water).

You'll then add your potatoes, cauliflower, and chickpeas followed by kale and salt & pepper to finish.

The result is a hearty stew with lots of flavor. The potatoes and chickpeas make it super substantial and filling, too. Plus, this only took 20 minutes to prepare!

Verdict: I'm continuing to enjoy my experience with Terra's Kitchen, and I'm so glad that my husband was able to fill my shoes this month! He was impressed with the simplicity of the dishes, and I think that the pre-chopped ingredients had a lot to do with that. Everything arrived fresh and instructions were easy to follow.

As far as value goes, I've found that other meal subscription boxes tend to have a set per shipment cost. It's so great that Terra's Kitchen allows you to fully customize your order, but the $62.99/box is a minimum. With this 3 meal all-veggie plan, this box cost came to $82.94. You do definitely end up paying for the convenience of pre-prepped fresh ingredients. Just know that this one is pricier than meal subscription services like Hello Fresh, Plated, or Home Chef (that offer a set price).
