When left to my own devices, I will very frequently plan meals that overlook veggies in favor of "the good stuff." (What can I say, I will always favor roast chicken, mashed potatoes, and macaroni and cheese over green beans and broccoli.) The truth is, though, that I really enjoy eating my vegetables.
