Freshly December 2019 Review

I subscribed to Freshly a year or so ago when my husband worked nights and I didn't have anyone to cook dinner for. I absolutely loved it! When his schedule changed, I decided to cancel, but I always missed my easy to prepare deliveries. Life is crazy, and once again I find myself solo for dinner, so it seemed like the perfect time to go back to one of my favorite food subscriptions!

Super Pesto & Veggie Fusilli

I love pesto and pasta loaded with veggies, so this dish was an easy choice! It was filled with bright pesto flavor and I appreciated the loads of mushrooms and even the hidden surprise cannellini beans which gave everything an earthy flavor and extra protein! The other veggies (squash and tomatoes) were cooked perfectly and I like how even though this was a microwave meal, all of the veggies still felt fresh somehow, and lacked that "too soft" texture that often plagues microwaved vegetables. I have been trying to add more greens to my diet and I love how the pesto was made with both broccoli and kale!

This dish is vegetarian and soy-free.

Slow-Cooked Beef Chili

This was a dish I used to order, and I actually love it, though I always have to add some sour cream to tone down the spiciness! This chili has a smokey sweetness that is perfect for a cold day. Instead of beans, you will find diced sweet potatoes, and this swap really works well, both texturally and taste-wise. There are large chunks of green peppers, celery, and onions too, creating a heavy texture that is wonderfully hearty. This is one of those dishes that doesn't look like much until you are full before your bowl is even empty.

This dish is high protein, dairy-free and soy-free.

Creamy Cashew Coconut Chicken

This was the one dish that I thought I might not like, but I ended up really enjoying it. It really isn't much to look at straight out of the microwave, but don't let that fool or discourage you from trying this one. I was pleasantly surprised that the chicken was dark thigh meat, as I prefer dark meat to white. The coconut cream sauce was outstanding, and a perfect blend of sweet and savory. The meat and sauce were complemented with brown rice, red peppers, broccoli, onions, and cabbage. The only element I disliked of this dish was actually the large chunks of cabbage. I would have preferred more broccoli instead.

This dish is high protein, dairy-free and soy-free.

Turkey & Mushroom Meatloaf

This was actually the first meal I ate this week because I was craving mashed potatoes! These are actually made of a mix of potatoes and cauliflower, though you could never tell. It is a nice, sneaky way to cut down on a few extra carbs! The loaf itself was delicious and has a layer of tomato glaze on top. The peas and carrots were a welcome traditional addition to a very nostalgic meal. This was one of my favorites! Like all of the meals this week, the servings look small until you dig in, and realize how filling they actually are.

This dish is high protein and soy-free.

Beef and Veggie Meatballs

This meal has the same tasty potato+cauliflower mash that was so delicious from the meatloaf meal! Score! I really love broccoli as the main veggie in a dish, and these charred florets really hit the spot and made a perfect complement to the delicious beef and veggie meatballs. On top of the meatballs was a creamy garlic and herb gravy that tied the whole dish together. This is another dish I would eat over and over!

This dish is high protein and soy-free.

Cauliflower-Shell Bolognese

Finally, our last dish was a large helping of cauliflower shells covered in a delicious red meat sauce. You can't really tell that these aren't normal pasta shells, making them a much lower carb option for your pasta fix. The red tomato sauce is filled with beef, carrots, celery, garlic, and parsley, and the whole dish has a healthy layer of melty cheese on top! This dish was another winner, and one I would gladly indulge in regularly!

The Verdict: Freshly was just as delicious as I remember it. When I first tried this subscription on my own (pre-MSA) I remember being really amazed at how good the meals were and how I didn't feel like I had to sacrifice taste at all for being "healthier." I still feel this way! I know when I have tried to cook health-conscious meals from online recipes, I always left the table feeling like I had swapped a "bad" ingredient for a "good" one, and though the nutritional numbers were probably a lot better, I felt like I was sacrificing taste or texture. With Freshly, these swaps feel more like creative or adventurous cooking choices rather than just being solely for nutritional benefits. A great example of this is the sweet potatoes in the chili. I actually preferred it to any bean heavy chili I have ever tried! If you are looking to make dinnertime (or lunchtime) faster and healthier, this is a great subscription to try. I know when I have a Freshly meal it saves me from spending about $15 per lunch takeout order, so the swap makes sense for me both health-wise and wallet-wise.

On the turkey meatloaf, your typo for “peas” had me laugh out loud 😉
