Green Chef 2-Person Keto Meal Plan December 2018 Review
My husband John and I both like to cook but often run into a lack of recipe inspiration. I Like that, with Green Chef, three meals are picked and prepped for us so we just have to decide which meal of the 3 we want to eat. We also try to stick to a keto diet so it’s great to learn how to make it exciting.
Green Chef makes sourcing sustainable, organic ingredients top priority. They are thorough in the ingredient list and allergy warnings on their recipes. The prices per meal are higher than some other competitors, but like eating high-quality, organic food from the grocery store, it costs more.
They also have a page on their site that walks you through how you can recycle all of the packaging.
As for shipping, you get to choose from weekly (1-3 boxes per), bi-weekly, or monthly deliveries on Wednesdays, Thursdays, Fridays, or Saturdays. The box is well insulated and you don’t have to be at home when it is delivered. Your food will stay fresh and cool. They make it very easy to change your delivery schedule or skip a week anytime. Recently, I learned that you can pick your preferred 3 meals from 5 options.

Meal 1: Sesame-Ginger Meatballs
Sesame-Ginger Meatballs with Creamy Butternut Squash and Sautéed Broccoli

The recipe cards include the amounts of each ingredient so the meals are easy to recreate if you keep them. There is a short description of the dinner, prep + cook time, calorie count, net carb count, allergen info, and tools you’ll need. Each meal is color-coded to help you organize your ingredients.
On the back, you will find a step-by-step guide with pictures on how to prepare your meal. The checkboxes help a lot if you jump around or split the prep between two people. You’ll also find chef’s tips and helpful bits of info to help if you aren’t a seasoned cook.
We started this dish by cutting up some veggies while we boiled the prepped butternut squash.
Next, we seasoned the ground beef and formed it into meatballs which get cooked in the oven.
The broccoli and bell pepper we chopped up earlier get placed into a saute pan and seasoned with only salt and pepper.
After we mashed the cooked squash, we pulled these toasty meatballs out of the oven.
The prep for this meal was super easy but I was disappointed by the lack of flavor. Typically we love the broccoli sides and end up remaking them on our own. But, this one was just bland. Our squash came out much more liquidy than theirs and, while it tasted like the cilantro lime coconut sauce, was lacking in texture. The meatballs were the highlight of this meal, but were still a bit weird in texture and were very sesame-y.
Meal 2: French Almond-Crusted Tuna

If you’ve read my past reviews, you might know that I have never really liked fish until trying the fish-based recipes in this box. The fish is usually a lighter selection and never smelly.
The tuna steaks are being encrusted with this mix of crushed almonds and herbs. We just have to pat them dry and press the sides onto the mix.
After slicing the celery stalks, we tossed them into a hot saute pan with some red onions and let them soften.
After removing from the heat, we added some blanched cauliflower and the herb-mustard vinaigrette.
Yum! The crust on these tuna steaks is looking delicious!
Small diced red bell pepper and capers get tossed into some oil to soften and create a sort of sauce.
OMG! This is this most delicious meal of the box by far. The tuna was hot and crunchy on the outside and tender inside. It would have been good without the sauce, but it was awesome with it. We held back on salt in this recipe since we knew we were going to work with capers, which often end up being too salty. The end result was a perfect balance of saltiness and flavor. I love the tanginess the mustard dressing added to the cauliflower side, I just wish the cauliflower were a bit crunchier.
Meal 3: Chicken Korma
Chicken Korma with Cauliflower “Rice” with Red Bell Pepper and Cashews

John and I both love Indian food, but its reliance on rice makes it hard to work into a keto diet. We’re excited to try this keto rendition and see if we can find a way to eat it more often.
The prep couldn’t have been easier; we chopped some scallion and pepper and then toasted the cashews.
After seasoning both sides of the chicken breasts, we seared one side in a hot pan.
After flipping, we added spiced coconut milk and brought it to a boil. We covered the pan and brought the heat down to a simmer to let the chicken cook through.
While the chicken is cooking, we browned up some cauliflower rice.
The bell pepper and scallion went in with the rice and cooked until the water was gone.
So, our dish ended up looking nothing like the picture of theirs (not so uncommon for us) but it was really good. I did expect it to be more flavorful, but I think the lack of real rice takes away from the overall flavor. The cauliflower rice was a bit watery and we could have cooked it down a bit longer. The chicken turned out well overall; it was a tad dry but the crispy outside was delicious. Adding crunchy garnishes, like the toasted cashews, always makes dishes better.
The Verdict: Our Green Chef keto box this month had some great flavors! The tuna steaks were by far the best of the box and one of our top 5 meals ever! The recent changes Green Chef has made in their packaging has really worked out well. We had no issue with spoiled food and the separate bags keep the meals organized and quick to grab out of the fridge. We feel great about eating organic, sustainable ingredients and love getting all of the ingredients needed delivered right to our door. Even though this plan costs a little more than the other plans offered by Green Chef, a meal for both of us (John and I) breaks down to about $30, we end up saving money versus if we went out and we eat healthier.
