Foodstirs is a baking subscription box that ships baking mixes kits to your door! Co-founded by Sarah Michelle Gellar, this subscription is all about high-quality, pre-made mixes with no preservatives or artificial ingredients.

Good to know: Foodstirs was previously monthly, but now ships bi-monthly. You should get your first box right away when you sign up, then they ship in August, October, December, February, April, and June.

This month’s recipe is for Strawberry Lemonade Shortcake. They explain what ingredients are included, what ingredients you’ll need to buy yourself, and then how much of everything you need for different parts of the recipe (cake and icing). They also give you a rundown on equipment you need, so that you don’t get started and then suddenly realize you don’t have scissors!
The step-by-step instructions are on the back, with plenty of photos and tips for mixing, baking, and decorating.
This card has a few tips specific to this recipe and a little variation on the icing.
The nutrition facts with calories and ingredients for each mix are listed here. I was pretty surprised to see that these only have about 220 calories per serving. That’s pretty good for a cupcake, right?
Foodstirs also included these two pins in our box this month. I don’t think I’ve ever gotten flair from them before, so this is a cute little freebie! I prefer “Whisk Taker” myself.
Here’s our shortbread mix. Although some Foodstirs projects can be time-consuming, everything is perfectly portioned for you which does make it easier. To this shortbread mix, we’ll add milk and butter from home, plus these True Lemon packets for extra lemon flavor:
I’ve never actually opened one of these before, so I didn’t know they were crystals and not liquid! I’m already thinking about other ways to use this stuff in my cooking.
The shortbread is mixed with hands only, to help prevent over-mixing and make sure the cold butter is evenly distributed throughout the mix. This was messy, but definitely would have been really fun for a kid to help with! Then you just portion the mix out into these standalone baking cups:
This is awesome because you can use these with any baking sheet—no cupcake tin required!
The mixture was difficult to measure precisely because it’s more of a dough rather than a cake batter, so I just tried my best to evenly portion it out between all 8 cups.
While everything was in the oven, I got started with the icing!
To this vanilla icing mix, you’ll add greek yogurt and more butter, plus:
Freeze-dried strawberries! You need to set aside a few for decoration, but the rest get crumbled up and mixed in. I ended up having to chop mine with a knife because they were a little soft rather than crunchy, but once again I thought a kid would have LOVED this step!
The recipe says to use a mixer for the icing, but I just used a small rubber spatula and it came together just fine.
FoodStirs also includes a piping bag for decorating, as well as these festive straws:
You have to cut these in half in order to have 8 total, which did send me scrambling to find the scissors.
As you can see, these did puff up a bit in the oven, but they definitely have a biscuit-like texture. They smelled lemony and delicious, and it was hard to resist taste testing while I let them cool!
Once they cooled, I decorated them with the icing and piping bag. It was a little bit more finicky than I’d have liked, just because some of the strawberry pieces were too big and got stuck in the piping bag. I had to stop and help those big chunks out while I was working.
All in all though, they did turn out really cute.
And they were delicious! The lemon and strawberry flavors were perfect for the summertime. I’m personally a fan of that tangy Greek yogurt icing, too. Since these were made with shortbread rather than traditional cupcake batter, they also weren’t too sweet… they were almost like an iced scone in a cup!
Verdict: This is probably the easiest Foodstirs project we’ve had in awhile, and one that I could see being loads of fun to bake with kids. They look so cute and the final results tasted great, too! Foodstirs recently updating their subscription to be bi-monthly and $14.99/month, so that breaks down to less than $2 per serving. While that’s definitely more expensive than baking 100% from scratch, it’s certainly cheaper than store-bought baked goods, and with organic ingredients too. I think this month was a home run in terms of being easy and fun, looking good, and tasting great.
