Carnivore Club sends artisanal cured meats from around the world.

Each month’s box is themed around a different producer that specializes in a particular style of cured meat. Boxes feature everything from French charcuterie and Italian salumi to Spanish chorizo and South African biltong.

All of the featured meats are cured and shelf stable for at least a month; however, Carnivore Club recommends that subscribers keep their boxes in the fridge to maintain product quality and increase shelf life.

'Njuja (6 oz.)- $11.50

‘Njuja is a famous and versatile Calabrian spreadable salami. It can be spread onto toast (either alone or with cheese), used as a base for pasta sauce, or warmed and spread onto grilled meats before serving.

I’ve never heard of ‘njuja before, so I was happy to see that Carnivore Club provided some information about it in this month’s brochure.

Cacciatorini Piccanti (6 oz.)- $13

This salami is made with Berkshire Picnic shoulder and hand selected Calabrian chilis. It’s known as “spicy hunter’s sausage” because shelf-stable sausages like this one were often carried by hunters to eat while they were out scouring the forests.

Salame Di Manzo (5 oz.)- $19

'Nduja Artisans uses only 100% Wagyu beef in this sausage (hence the hefty price tag)! It’s seasoned with fresh thyme, black peppercorns, and Cabernet.

Finocchiona (6 oz.)- $14

Finocchiona is a Tuscan-style salami made with fennel pollen, fennel seeds, chianti, and black pepper.

The last salami in this box, Nostrano, is flavored with garlic, wine, and pink peppercorns.

The sausage “initially starts with a mouthful of delicate, floral notes and works from subtle to fearless with a bold, peppery finish.”

The Verdict: I’m really impressed by the quality, quantity, and taste of the cured meats from 'Nduja Artisans that are featured in this month’s Carnivore Club. They’re all delicious, and I particularly like the pink peppercorn Nostrano. It might be needless to say, but I received a lot of meat in this box! I can’t really complain about receiving a lot of meat in a box called Carnivore Club, though. (That’s pretty much the promise!) In terms of value, if I purchased the items in this box individually it would cost me $70.33. Considering the $50 cost of the box, that’s pretty great!
