Hate Looking In Your Fridge and Finding It Empty? How Purple Carrot Saved the Day

How did I become the homie who has to feed all the people in my house? I enjoy the creative expulsion that is wizarding an epic meal, but then I need to rest for a long, long time… and yet everyone needs to eat again a few hours later.

This inconvenient pattern is how and why my tragic fridge got turned from mostly-empty-except-condiments to phenomenally veggie-filled and functional by Purple Carrot.

You probably know Purple Carrot as the 100% plant-based, vegan meal kit service, but did you know they also have prepared meals, frozen meals, and pantry items? It eclipsed my expectations. Here’s how:

Breakfast got exciting (and eaten)

I was the smiley-face plates of eggs and fresh muffins type of mom for a second there, but the effort was not sustainable. Our house became the oatmeal factory, and my kids were not impressed. When Purple Carrot breakfasts entered the scene, things got great again.

What’s this, carrot cake pancakes on a Tuesday before school? Peanut butter mango toasts, that’s a thing? Alien food (actually chia seeds) in parfait form? It has been a weird combination city first thing in the AM over here, and an incredibly novel way to get my (admittedly adventurous) kids to fuel up before school.

Lunches are quick, so yummy, and mine. All mine.

Once those precious, perfect food hogs are out of the house and I’m in a productivity tornado, I need to eat lunch, but how could I risk losing momentum? PB&J crusts leftover from lunchbox packing historically haven’t had the staying power to keep me from grazing on junk. Purple Carrot steps in to meet my satiation needs yet again with their 2-minute microwavable meals.

You’ve got your veggie-filled pastas, flavorful bean dishes, hearty quinoa bowls, and more. The options are a list of things I’d 100% order out at lunch with my friends, but with the privilege of being left alone to devour them and carry on with my day. Delightful experience.

I am the benevolent queen of dinnertime with the meal kits

As someone who enjoys cooking, I admit I have a standard for quality, healthfulness, and originality in the meals I serve my fam, and most meal kits don’t meet it. Purple Carrot, au contraire, does more than just the grocery shopping and portioning for me. They are my co-conspirators in coming up with dinner ideas that tick the boxes both of nourishing my family and keeping me interested.

All that and they’re on the table in 15-35 minutes. That’s mind-blowing.

Full disclosure: we are a plant-loving crew, but we’re not vegan, so I occasionally add a little meat into the mix. On nights when I don’t feel like bothering with meat, we still find our bellies feeling full.

The pantry items are good, clean fun

Let’s be honest, snacks get us through the day. I can speak firsthand to the importance of filling the pantry with good stuff, because come the 3 pm slump, I’m consuming whatever is in there. It’s about setting yourself up for success.

Which, yet again, Purple Carrot is equipped to do. I love me a cheese and cracker combo, and the plant-based cheeses and delightfully seedy crackers are spot on. The afternoon coffee need is met with some amazing oat milk latte options, my favorite being the Caramel Cold Brew. I forever have a sweet tooth, so things like Almond Butter Dark Chocolate Cups are satisfying without being junky.

Otherwise a very normal, mundane week, this week has been outstandingly delicious. I’ve been fed.. fed very well. I’ve been given an assist in feeding the masses. Purple Carrot helped me—it healed me! With plant power, yes, but with thoughtful, appealing meal ideas and ingredients, too. Lie down and let it do the same for you.
