Takeout Kit Box November 2017 -0005

Takeout Kit's menu assortment is quite extensive. Currently, you can choose from 10 offerings. This month, I went with Italian Truffle Risotto with Portobello, Cremini Mushrooms and Parmesan. You can read a bit of history on each takeout meal along with the region in which it originated on the info card provided.

Takeout Kit Box November 2017 -0006

On the flip side of your info card, you'll find your recipe along with a visual guide to what supplies you'll need (pots, pans, etc.).

Cook Time: 40-45 minutes

Serves: 4

Here are the ingredients:

Takeout Kit Box November 2017 -0007

Arborio Rice - (Buy a 16 oz. bag for $3.99)

I have had this rice before (my Mom uses it a lot), but I have never cooked it before. It is an Italian short-grain rice that becomes firm, creamy, and chewy when cooked.

Takeout Kit Box November 2017 -0008

Parmesan Cheese - (Buy 16 oz. for $18.49)

What would a creamy risotto be without a big bag of parmesan cheese?! This bag is 100% authentic parmesan cheese that was freeze-dried to stay fresh during shipping.

Delicious & Sons: Black Truffle & Mushroom Sauce, 6.35 oz. - Retail Value $12.35

What a decadent sauce! This is a Mediterranean sauce of Italian black truffles, olive oil, and mushrooms. I have never cooked with truffles so this was an exciting ingredient to get, plus you will have a ton leftover!

Takeout Kit Box November 2017 -0010

Native Forest Crimini Mushroom Slices, 4 oz. (2 cans) - Retail Value $2.79 (found on sale for $2.09)

Native Forest Portobello Mushroom Slices - Retail Value $2.79 (found on sale for $2.65)

The main focus of this dish are the two kinds of mushrooms: crimini and portobello. These cans are filled with pre-sliced, organic mushrooms that make cooking this dish a breeze.

Marconi 100% Extra Virgin Olive Oil, 1.75 fl. oz. - (Buy a 100 pack box for $20.49)

I love that this adorable bottle of olive oil was included in the box! Not everyone keeps olive oil in their pantry so this, to me, is a very thoughtful ingredient to include.

Shallots and Garlic

This blend of shallots and garlic are dried, which is why one of the steps is to add this packet to water. It softens them up before you add them to your pan of oil.

Vegetable Broth Packets

That's it, now let's get cooking!

Takeout Kit Box November 2017 - 0015

You start by bringing water and all of those little vegetable broth packets to a boil and adding the shallot blend to water.

Takeout Kit Box November 2017 - 0016

Add olive oil to a pan. Once your oil is warm, add the garlic and shallot blend, rice, and both cans of mushroom. Mix together and let it warm until fragrant.

The next step is time-consuming but worth it if you want your risotto to be creamy and tender. With your burner on low, add your vegetable broth one ladle at a time, stirring the risotto constantly. You want your broth to absorb completely before adding another ladle full. This should take you about 30 to 40 minutes to complete. I am not the world's most patient person, but I can safely say that this step is totally worth it in the end!

Takeout Kit Box November 2017 - 0019 Takeout Kit Box November 2017 - 0020

Once your broth is almost gone, you will want to measure out 3 ounces of that yummy truffle sauce. Add it to your risotto and mix together while still under the low heat.

Takeout Kit Box November 2017 - 0021 Takeout Kit Box November 2017 - 0022

Once your truffle sauce is mixed in completely, add the entire bag of parmesan cheese and half of the bag of chives. Mix this together completely. From here, you will most likely want to rehydrate your risotto now that you have added the parmesan cheese. I ladled out the remaining broth and continued to mix together slowly.

Takeout Kit Box November 2017 - 0023

That's it! Plate and add the remaining chives to top your risotto. What you have here is a slowly cooked, creamy, salty black truffle, mushroom risotto that is packed full of so many flavors! I love mushrooms but don't often cook with them, but the flavors that they add to this dish and the texture is beyond delicious. I paired this Italian dish with a glass of red wine, perfection!

Verdict: What I love about Takeout Kit, which is unlike other meal subscriptions that I have tried, is that the ingredients all have a two-month shelf life. This allows you to cook the monthly meal at your leisure and without rushing to meet an expiration date. For me, this month's Takeout Kit dish was something that I have never cooked before. I love that Takeout Kit brings such unique dishes and ingredients right to my door! Plus, even though this dish did take a bit longer to make, each step was super easy and everything comes pretty much ready to go. I would recommend Takeout Kit to any of my fellow busy parent's or anyone that loves to cook and explore different meals!

To Wrap Up:

Can I still get this box if I sign up today? No, it looks like this meal is sold out!

Value Breakdown: This box costs $25.00 a month, including free shipping. This month's box arrived with everything that I needed to cook the featured meal, right down to the olive oil! The serving size for this dish was for four people, which averages out to $6.25 per person. To eat this meal at a restaurant, you would be spending a lot more per person. I think that the value is absolutely worth it for this delicious Takeout Kit dish!

I just ordered this one since it’s back in stock. Loved the paella and it sounds like this one will be good as well.

While I love the idea of the food subscription boxes, I’ve always waffled whether or not it would be worth it for my family. This is the first one that I’ve looked at that I seriously think would work. We love international cuisines, but I always despair not being able to find authentic ingredients locally. I’m so excited to try this!

Sigrid, that’s exactly why I created Takeout Kit! So excited to see you on the list – I know you will love it!

Hi this is Rachael from Takeout Kit! We will have more Risotto kits in stock over the next few weeks. They sold out quickly! I recommend joining the email list to keep updated on the status. Our truffle sauce is being imported from Italy as we speak. Cheers!

We just signed up for paella for our first month, but I can’t tell if we’re getting it in December or January?

Hi Michelle,

Thank you for your order! Our cut-off date for our December 1st shipment is today and we have your kit in stock (if you chose Risotto the ship date would have been delayed). We are planning to ship it tomorrow but please let me know if you would rather start your subscription at a later date!

This looks like a great one.
I wonder if they will get it back in stock ? I will have to remember to check back.
I have ordered a couple of meals from them that were really good. I love that they don’t have to go in the fridge and risk wasting if not used soon enough.
I have not done the subscription though, but like being able to choose from the options they have on their site.

I highly recommend getting this meal if it comes back in stock! I agree with completely, I love that you can just buy one of the meals if you want. Thanks for your post!

Hi Taryn! If you would like to purchase a la carte, you can reserve a truffle risotto kit now and we’ll ship it as soon as we can (1-2 weeks). Or if you sign up for any subscription plan, we’ll definitely have some in time for our next ship date (January 2nd). Hope that helps!

Never thought I’d say this, like EVER, but that is the cutest bottle of olive oil I’ve seen!
