Recently, I have been eating low-carb and eating meals sans-dairy (thanks to my husband’s lactose-intolerance). Green Chef recently started offering a keto meal option for their 2-person plan which seems perfect for us because it offers low-carb and dairy-free meals. There isn’t the same level of customization offered with this plan that is available with some of the other plans, but we thought we would give it a try.

If the amount of waste from the packaging of food delivery boxes bothers you, then you’ll be happy to know that Green Chef makes a great effort to use recyclable and compostable packaging. They also have a page on their site that walks you through preparing the packaging for recycling. Pretty responsible!

Green Chef also makes sourcing sustainable, organic ingredients top priority. They are thorough in the ingredient list and allergy warnings on their recipes. The prices per meal are higher than some other competitors, but like eating high-quality, organic food from the grocery store, it costs more. Plus, we found that we spend much less than eating out and love not having to play the “what should we eat for dinner” game.

As for shipping, you get to choose from a delivery day of Wednesdays, Thursdays, or Fridays. They say that their box is well insulated and you don’t have to be at home when it is delivered. Your food will stay fresh and cool. They make it very easy to change your delivery schedule or skip a week anytime. You don’t have the option of switching out meals, but you can see your menus a couple of weeks in advance so you can skip whichever weeks you don’t like.

The recipe cards that come with these meals are printed in full color on cardstock so they are great to hole punch and put in your recipe book if you want to reference them later.

There is a short description of the dinner, prep + cook time, calorie count, and each meal is color coded to help you organize your ingredients.

On the back, you will find a list of tools you will need from your own kitchen, items from your pantry, and a step-by-step guide on how to prepare your meal. You’ll also find chef’s tips and helpful bits of info to help if you aren’t a seasoned cook.

This meal was pretty simple to make. I started by roasting the chicken and zucchini. After a little chopping, I sautéed the veggies and assembled the salad. The balsamic glaze was the trickiest part, but I’ve made it before (thanks to other Green Chef meals) so it turned out well.

I really enjoyed the flavors in this meal. I also like having two side options. The chicken was tender and tangy with the balsamic glaze and the cashew “parmesan” they included gave a little crunch and saltiness to the roasted zucchini. I can’t say enough good things about the tomato salad. The flavors are robust and add so much to this meal. I replicated it easily a few night later and it is now my go to side dish. This was my favorite meal of this box.

I’m admittedly not a big seafood fan, but fish can be a healthy meat option so I’m willing to try. Plus, ramen! Yum!

There was much more prep work for this meal than the previous one, so I broke it down into more steps than they suggest to make it easier for me. The first few steps were cooking the shirataki noodles (which smelled like feet), boiling the egg, and cooking the bacon. Then, I combined and cooked the ramen ingredients. The sole prep was simple and the broiling didn’t take long at all. The last step was to cut the radishes and snap peas for the salad.

This is my least favorite meal from Green Chef so far. And I was so excited! The sole ended up looking much different than the pictures and was dry and bland. The salad added a nice texture to the meal but I found certain bites to be bitter from the radishes. The worst part was the ramen. 🙁 I appreciate trying to use low-carb noodles, but they never fully lost their stinkiness and the texture was like jelly. The broth could have been much more substantial and savory. All-in-all, I love making ramen and I would have been happy with just a bowl of it as the whole meal. More time could have been put into preparing the broth and ingredients to make it super satisfying.

This meal was quick and easy to prep except that I ran into a bad ingredient issue. The steak had gone bad at some point and was not useable. Since I’d already prepared the pickled cabbage, I decided to run to the store and grab some replacement meat. I seasoned it with the delicious Cuban seasoning (cumin you have my tastebuds’ heart) before cutting the onion and bell pepper. The steak then went into a saucepan to saute with the veggies. After chopping the romaine, I assembled the lettuce wrapped fajitas.

Note: I contacted customer service and explained the situation with the bad beef. They ended up crediting me for a free meal on my next box to make up for us having to purchase replacement beef.

These fajitas were good. They ended up being more like a salad because the romaine leaves didn’t hold all of the yummy ingredients. I was satisfied but not too full. The aioli was excellent but the pickled cabbage was too hot (my fault; I used all of the red pepper flakes).

The Verdict: My first Green Chef keto was an ok experience. It had some hiccups but did introduce me to some new ingredients and side dishes suite to a low-carb diet. I enjoyed all of the meals and felt great about eating organic, sustainable ingredients. You get all of the ingredients you need delivered right to your door. Both my husband and I had plenty to eat with each meal and I can see taking a leftover serving for lunch the next day if you cook for one. Even though this plan cost a little more than the other plans offered by Green Chef, a meal for both of us breaks down to about $30, we end up saving money versus if we went out.

To kill the smell of the shirataki noodles, you need to rinse very thoroughly, heat it for 1-2 minutes on high in the microwave, rinse again, and then blot heavily with paper towels. We eat it a few times per month, and that seems to de-funk it fairly well!

I’m also lactose intolerant but I think I would have to take one for the team on that one. It might actually kill me to remove dairy from my diet.

FWIW – I suspect that the pan you put your bacon in was too hot, causing it to cook unevenly.
