Saffron Fix is a meal subscription box that specializes in Indian cooking. They ship every two weeks, and you can choose whether to receive 2 or 3 recipes in every box. Every box contains all of the ingredients you need to make the featured recipes.

This was my first time cooking with Saffron Fix and needless to say, I was very excited to try it! So let's get cooking!

Chicken Kofta Curry

Calories Per Serving: 500 (entree only)

Cook Time: 40 minutes

I love curry, meatballs, and an extra hearty meal. So after reading the description card, I knew that this meal was for me! Even though I eat curry often, I have never had meatballs in a curry sauce which was another reason why I really wanted to try this dish. In looking at the ingredients, I knew this was going to be spicy, I was ready for it!

*It's also good to note here that each card will provide you with a 'best if cooked by' date. This particular meal should be cooked within five days of receiving. I was pleasantly surprised to see this note here since I have always wondered, factoring in transit and delivery time, how quickly meal boxes should be prepared.

The back of the card has the instructions on preparing and cooking the meal. My husband always teases me because, while I love to cook, I don't enjoy following recipes. This looked easy enough for me though, and I was excited to follow along to ensure I made the most authentic dish possible.

Here we go! Step one is all about meatball prep. What I love about Saffron Fix is that you don't really have to do a ton of prep, all I had to do here was finely chop the cilantro. Then you mix together the meat, cilantro, bread crumbs, and onion. When you start to form, you will get 7 to 8 meatballs that you then add to a hot pan of oil to start frying.

Step two takes us to the sauce. Warning, don't taste this before adding the cream base because this is spicy! You want to make sure you sweat your onions down before adding the spices. Let this all combine and get the aromatics of the spices.

Next, you want to add the cashew paste and water. The recipe calls for 1/4 cup of water, but we added a bit more because the spices and onions really soaked it up. The extra water with the cashew paste makes this delicious cream base curry that smells so good!

Once the meatballs were perfectly fried (I made them and am pretty proud), you can add them to this delicious curry sauce. Cover your pan and let the meatballs soak up this delicious sauce for about 15 minutes.

While your main meal cooks, you want to chop your cucumber and tomato. Place it in a bowl and dress with lemon juice for a refreshing salad. I added a little salt to taste as well just to really bring in all of those delicious flavors. This dish also comes with flatbread for dipping that I just put on a pan to broil in the oven for maybe 5 minutes.

Once the 15 minutes have passed your house will be filled with this spicy aroma that tells you it is time to eat! Cover the meatballs in the sauce to really get all of the flavors mixed together.

That's it, time to plate your dish! We made enough meatballs that my husband and I were each able to have four and that was the perfect amount plus the flatbread for dipping. The meatballs were so delicious, perfectly cooked, and packed full of flavors. I loved that cumin seeds are in the meatballs because it added this extra flavor that you don't get with a standard breadcrumb based meatball. The sauce itself is so spicy! If you don't like spice, you might want to only use half of each spice packet instead of the whole thing. We love a spicy curry, luckily, so went all in and it was totally worth it! The flatbread was great to use to soak up the extra sauce. The cucumber and tomato salad was so light and fresh which was great to enjoy between spicy bites of the main dish. One thing we both agreed on was that it would have been great to have some rice in this meal just since the sauce was so spicy it would have really brought everything together nicely.

Paneer Butter Masala

Cook Time: 30 minutes

I was really excited to try this dish because I have never had paneer. My husband couldn't believe it so we both agreed this was the perfect second dish to pick. We used to be vegetarian for many years, and while we no longer are, it is nice to bring back a dish that we would have enjoyed when we were meat free.

On the backside, we have the cooking steps. Even though this recipe has one extra step, it seems super easy!

The first step for this dish is cutting the little green chili. These are a very spicy chili so I decided to wear gloves to chop, and even though I put the whole chili in, I did remove all of the seeds. Then, you want to add the chili and onions to a pan of butter to brown.

While the onions and chili are cooking down, chop the tomatoes.

Once your onions are cooked down you want to add all of your spice packets and the chopped tomatoes. You want to stir this all together to mix the flavors and allow this all to cook down until the tomatoes are browned.

While that cooks down, add the cumin seeds to a pot of hot oil to brown. I love the smells that cumin seeds give off, so much flavor!

To the same pot, you want to add your peas, rice, and water. Let this all come to a boil and cook down in 8 to 10 minutes. I would stir constantly to help the rice absorb the water. Once the rice takes in all of that water, you simply fluff with a fork for this lovely pea and rice mixture. Place this to the side for now, you will need it soon!

Back to our sauce! Now you want to add your cashew paste and milk. Let this simmer for all of the liquid to combine with those wonderful spices.

Once your sauce comes to a simmer, add your paneer. The card notes to chop your paneer into cubes, but the package I received was already chopped. I love when things are easy! I covered the paneer in the sauce and let this wonderful mixture simmer a bit longer.

Once your sauce is set to a simmer, add your fluffy rice and pea mixture that you already made. Mix this all together. Your rice is going to soak up that sauce so quickly so make sure you keep mixing until everything is covered thoroughly. OMG, look at this beauty, I could have eaten it right out of the pan!

I was nervous that I wasn't going to love this or that it wouldn't be enough and I would need to add chicken or shrimp. Boy oh boy was I wrong! This dish was beyond incredible I almost don't even have words for it. The cashew paste and milk made this creamy, but then you have the paneer that added a whole other level of richness. All of the sauces were soaked up by the rice that made the rice just melt in your mouth. Even though I did add the whole chili, I don't think this dish was nearly as spicy as the meatball curry meal. Besides adding a bit more spice, there is really nothing else I can say about this meal, I loved it and will be dreaming about it for weeks to come!

Verdict: I have cooked a lot of dinners from various meal subscription boxes, and I can safely say that Saffron Fix is my absolute favorite! I loved Saffron Fix! I used to cook a lot of Indian food, but have since gotten away from it simply because I am cooking for my toddler now and like to have meals that we can all eat. He doesn't share my love of spicy foods just yet! Saffron Fix reminded me how easy these meals are to cook and that I really need to start cooking dishes like this again. I was really happy that we picked one meat and one vegetarian meal as well which gave a nice variety. While we didn't have any leftovers (I mean we really enjoyed both dishes), the monthly price for the box breaks down to about $12.50 for two people. If you consider how much these meals would cost to purchase at the store, the fresh produce and all of the spices, you would come up with a lot more per person! I think what I loved most about Saffron Fix was just the ease of each recipe. You don't have a ton of chopping or prep and each meal has instructions that are easy to follow. Even if you are like me and would rather do your own thing, this box makes cooking authentic dishes fun!
