This month's recipe is for Campfire S'Mores Brownie Cupcakes! I *love* brownies and I don't think I've ever received a brownie-based kit from Foodstirs before, so I was very excited about this box!

The intro card explains what ingredients are included, what ingredients you'll need to buy yourself, and then how much of everything you need for different parts of the recipe (brownie, crust, and icing. They also give you a rundown on equipment you need from home, like baking pans and mixing bowls and the like.

On the back, the nutrition facts with calories and ingredients for each mix are listed. The icing facts include an 'as prepared' calorie count as well, but I had to calculate how many calories the eggs, oil, and butter add to the recipe to get a more precise count. And then I did my best to ignore it while I cooked and sampled these delicious treats 🙂

Foodstirs included 8 foil cupcake liners. I love that the gold color perfectly matches the campfire theme! They did specify that you should use these with a muffin tin, but (shh!) I cheated and just stood them up on a baking sheet. Foil cupcake liners are usually sturdy enough that they can stand up on their own, in my experience, and I didn't have a muffin tin on hand.

The first step is to crush your graham crackers into crumbs, then mix with melted butter to form the bottom crust of the cupcakes. Since the graham crackers were already in a sealed bag, this step was super easy: I simply crushed them with the bottom of a glass! I love that this is a fun, safe, and non-messy task that's very kid appropriate, too!

Once the graham crackers are in the bottom of the tins, you mix up your brownie batter by combining this bag with two eggs, 1/3 cup oil, and just a bit of water. I do love how everything is pre-measured for you, which makes everything pretty simple, even if you're cooking with kids or trying to multitask.

Here's what everything looked like before I slid it into the oven. The bake time on these was 15-17 minutes, but in my oven, I had to go for about 20 before my centers were fully cooked.

Once the brownies are baked through, you'll top each cupcake with 8 mini vegan marshmallows, and then bake at a higher temperature for just a few minutes to brown them. This is another fun step for kids, with a bit of counting involved for the younger ones.

Everything worked out perfectly for these steps. I honestly didn't realize until this point that the cupcakes are supposed to LOOK like a campfire, and the marshmallows are the logs! So cute!

Foodstirs icing has been the same in all kits - it's a vanilla base, which you mix with greek yogurt and butter, and sometimes dye with an included natural food coloring. The resulting icing is tart and sweet, and I personally like it even though I'm a die hard buttercream aficionado, although it's very different.

This icing was a bright-ish orange to make our campfire! After putting into the freezer for 4 minutes as instructed by the recipe, I was ready to finish our decorating!

I seriously love how cute these turned out! They would be loads of fun to make for a cookout or backyard camping weekend with kids. They were also downright delicious– I loved the buttery graham crust, brownie, and marshmallow combination. I think this is my favorite Foodstirs kit yet!

And timing wise, I think they nailed it this time: this project took me under 1 hour to complete. My baking time was slightly longer, but everything else seemed about right.

Verdict: This was a really fun and tasty Foodstirs kit this month, with lots of opportunities for kids to help too! I love brownies, and the flavor on these was also really, really good. Foodstirs recently updating their subscription to be bi-monthly and $14.99/month, which breaks down to less than $2 per serving. I think these projects are worthwhile for anyone looking for organic ingredients and fun, creative projects to share in the kitchen.

Let’s just say there’s some frat houses that are going to be smelling like s’mores and FoodStirs every other month…hahaha

It’s fun to have something to send to older kids, too. I know it’s aimed at moms doing it with younger kids, but I think they will have fun doing it at college, too.

Great idea! I’ve also found that even though they say to use a mixer and a cupcake pan, you can use a fork or a whisk and the included liners and they turn out just fine… so it strikes me as a perfect little treat for students that have access to a kitchen, even if they don’t have a lot of fancy baking stuff 🙂
